EASY ENCHILADA’S

1 Cup Enchilada Sauce
4 (6 Inch) Corn Tortillas
¾ Cup Fat Free Refried Beans

1 Cup Frozen Pepper, Onion
Stir Fry Blend
½ Cup Reduced Fat Monterey
Jack Cheese, shredded

Preheat oven to 375°. Spray a small baking dish with cooking spray. Spread ½ the enchilada sauce over the bottom. Place a tortilla between 2 sheets of damp paper towels. Microwave for 20 seconds. Spread 3 tablespoons refried beans down the center. Top with the pepper onion blend and sprinkle with 1 Tablespoon cheese. Roll up and place seam side down in to the baking pan. Repeat until you have done all the tortillas. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese. Cover with foil and bake 15 minutes. Remove the foil and bake 5 more minutes. Serve
