THREE CHEESE VEGETABLE QUESADILLAS |
1/2 Cup Mozzarella Cheese,

1 Jalapeno Pepper, seeded
|
Combine the cheeses in a bowl. Heat oil in a non-stick pan over medium heat. Add the next 4 ingredients and cook for 2 minutes. Stir in the remaining ingredients and remove from pan. Return skillet to stove. Add 1 tortilla and top 1/2 with 2 tablespoons each of the cheese and vegetable mixture. Fold over and cook for 1 minute. Turn over and cook for another minute until cheese melts. Cut in Wedges and serve. |
