SPINACH PASTA

10 Ounces Whole Wheat Spaghetti
Cooking Spray
2 Garlic Cloves, minced
˝ Cup Walnuts, coarsely chopped
1 Cup Sun Dried Tomatoes, drained and
cut into strips

Pinch of Nutmeg
6 Cups Baby Spinach
˝ Cup Feta Cheese, crumbled
Ground Pepper

Bring a large pot of Water to a boil. Add the pasta and cook for 7-10 minutes. Coat a skillet with cooking spray, over medium heat. Add the next 2 ingredients and sauté for 2 minutes. Add the tomatoes and sauté for 1 minute. Sprinkle with nutmeg. Add the spinach and stir constantly for 30 seconds until the leaves wilt. Drain the pasta and toss with the spinach mixture. Add the feta cheese and pepper. Serve.
