ITALIAN CHICKEN SALTIMBOCCA

4 Each Chicken Breast without skin or bone, Pounded to 1/4 inch
Pepper to taste
2 Teaspoons Minced Garlic
1 Cup Part skim milk mozzarella cheese, Shredded
2 Ounces Prosciutto

4 Each Sage leaves
1/4 Cup White wine
1/8 Cup olive oil
1/8 Cup Parmesan cheese, shredded

Preheat oven to 325 degrees. Place chichen breast on a cutting board. Season with pepper. Sprinkle each with minced garlic and mozzarella cheese evenly. Place a slice of prosciutto and sage leaf on each. Roll up like a jelly roll. Secure with a tooth pick. place in a 9 X 13 pan. Whisk wine and olive oil together. Pour over chicken rolls and sprinkle evenly with the Parmesan cheese. Bake 30 -40 minutes until cooked through.
