CHEESE STUFFED CHICKEN

4 Skinless, Boneless Chicken
Breasts
2 Ounces Monterey Jack
Cheese
1 Egg
1/3 Cup Italian Seasoned
Bread Crumbs

2 Tablespoons Parmesan
Cheese, grated
2 Tablespoons Parsley
Pepper to taste
1 Tablespoon Olive Oil

Preheat Oven to 400°. Using a knife, butterfly each chicken breast. Open like a book and place a slice of cheese on each. Roll the chicken breast up. Beat the egg in a bowl. Combine the breadcrumbs and the next 4 ingredients in another bowl. Dip the chicken into the egg and then roll in the breadcrumb mixture. Place the oil in a skillet. Add the chicken and brown for about 2 minutes. Place the skillet into the oven and cook for 20 minutes, or until chicken is cooked through.
