CHICKEN PIZZA

3/4 Cup Rice Vinegar
1/4 Cup Firmly Packed Brown Sugar
1/4 Cup Low Sodium Soy Sauce
3 Tablespoon Water
1 Tablespoon Giner, Minced & Peeled
2 Tablespoons Chunky Peanut Butter
1/2 Teaspoon Crushed Red Pepper
4 Garlic Cloves, minced

Cooking Spray
1/2 Pound Skinless, Boneless
Chicken Breasts, cubed
1/2 Cup Reduced Fat Swiss cheese,
shredded 1/4 Cup Mozzarella Cheese,
shredded
1 Basic Pizza Crust
1/4 Cup Green Onions, chopped

Preheat oven to 500°. Combine the first 8 ingredients in a bowl. Stir with a whisk. Heat a non-stick pan coated with cooking spray over medium heat. Add chicken and sauté for 2 minutes. Remove from pan. Pour the vinegar mixture into the pan and bring to a boil. Cook 6 minutes or until thicken. Return chicken to pan and cook for 1 minute or until chicken is cooked through. Sprinkle cheeses on the crust. Top with chicken mixture. Bake for 12 minutes on bottom rack in oven Sprinkle with the green onions.
