TURKEY QUESADILLA'S

1/2 Pound Lean Ground Turkey
1 Cup Red Onion, chopped
1 Garlic Cove, minced
2 Cups Zucchini, shredded
1 Cup Salsa
1 Cup Frozen Corn
1 Cup Red Pepper, chopped

1 Can (4 OZ) Diced Green
Chilies
2 Tablespoons Parsley
1/2 Teaspoon Oregano, dried
1/2 Teaspoon Cumin, dried
1/8 Teaspoon Cayenne Pepper
8 Flour Tortillas
2 Cups Reduced Fat Mexican
Cheese, shredded

Cook turkey until fully cooked. Add next 11 ingredients and cook for 5 minutes.Place 4 flour tortillas on an un-greased cookie sheet. Divide the meat mixture evenly over them. Sprinkle evenly with the cheese. Place the other 4 flour tortillas on top. Place a non- stick skillet on the stove. Cook each quesadilla until brown on each side and cheese is melted. Cut into wedges. Serve.
