MOZZARELLA CHICKEN

4 Ounces Uncooked Spaghetti
1/2 Cup Italian Seasoned Dry
Bread Crumbs
3 Tablespoons Grated Parmesan
Cheese
4 4 ounces Skinned, Boneless
Chicken Breasts

1/4 Cup Egg Substitute
1 Tablespoon Olive Oil
4 Ounces Part Skim Mozzarella
Cheese
2 1/2 Cups Fat Free Italian
Herb Pasta Sauce
2 Tablespoons Chopped Parsley

Preheat oven to 425. Cook Pasta per package directions. Place bread crumbs and parmesan cheese in a bowl. Dip chicken in the egg substitute and then the breadmixture. Heat oil in the pan and add chicken. Cook for 2 minutes on each side. Add a slice of the cheese on to of each chicken breast. Place on a baking pan. Bake for 14 minutes or until done. Heat the pasta sauce in a pan. Place 1/2 cup pasta and 2/3 cupssauce on 4 plates. Place a chicken breast on top. Sprinkle with parsley and serve.
