CHICKEN COUSCOUS

2 Cups Water
1 1/2 Cups Couscous, uncooked
1/2 Cup Orange Juice Concentrate,
thawed
1/3 Cup Lemon Juice
2 Tablespoons Water
2 Tablespoons Olive Oil
2 Teaspoons Ground Cumin

1/4 Teaspoon Black Pepper
3 Cups Chicken, cubed &
cooked
2 Cups Cucumber, chopped
& peeled
1 Cup Red Pepper, chopped
1/4 Cup Green Onions, sliced
1/2 Cup Fresh Cilantro

Bring water to a boil in a medium pan. Gradually stir in couscous. Remove from heat, cover and let stand 5 minutes. Fluff with fork. Combine orange juice and next 5 ingredients. Stir well. Add to couscous mixture. Add chicken and the remaining ingredients. Toss well. Serve.
