CHICKEN FRICASSEE WITH ORZO

4 Skinned & Boneless Chicken
Breasts
1/4 Teaspoon Pepper
2 Teaspoons Butter
1/4 Cup Green Onions, chopped
1/2 Cup Carrots, diced
1/2 Cup Ham, diced

2 Cloves Garlic, minced
1 Cup Fat Free Chicken Broth
1/2 Cup Chardonnay
1/3 Cup Whipping Cream
3 Cups Hot Cooked Orzo
1/4 Cup Parsley, chopped

Sprinkle chicken with pepper. Melt butter in a large non-stick pan. Add chicken and cook 3 minutes on each side. Removed from pan. Add the next 4 ingredients and sauté for 4 minutes. Add the broth and wine. Put chicken back in and simmer 10-15 moreminutes until chicken is done. Remove chicken from pan Add the whipping cream and cook uncovered for 8 minutes. Spoon 3/4 cup orzo on to 4 plates. Top with a chicken breast. Add 1/3 cup sauce to each and 1 tablespoon parsley. Serve.
