CURRIED CHICKEN WITH COUSCOUS |
1 Cup Water

1 Pound Chicken Breasts

Combine the water and 3/4 cup coconut milk in a saucepan. Bring to a boil and slowly add the couscous. Remove from heat, cover and let stand 5 minutes. Combine the flourand curry powder. Add the chicken and coat. Heat the oil in a pan and add the chicken. Stir fry until done about 5 minutes. Add the remaining coconut milk, and carrots. Reduce heat and simmer for about 7 minutes until carrots are cooked. Sprinkle with the cilantro.Serve over the couscous. |
