SOUTHERN STYLE NOODLES WITH SPINACH AND HAM

1 Cup Onion, chopped
6 Ounces Reduced Sodium Ham,
cut into thin strips
1 16 Ounce Can Tomatoes, chopped
1/2 Cup Chicken Broth
5 Cups Spinach, about 10 Ounces

1 Teaspoon Pepper
6 Ounces Wide Egg Noodles
2 Tablespoons Cider Vinegar
1/4 Teaspoon Hot Pepper Sauce

In a non-stick skillet add onion, ham and heat through. Stir in tomatoes and chicken broth. Add spinach and pepper and simmer 6 minutes. Meanwhile cook noodles in a large pan of boiling water until done 7-10 minutes. Add the cider vinegar and hot pepper sauceto the tomato mixture and stir for 30 seconds. Pour over drained noodles and serve.
