FETTUCCINE WITH ZUCCHINI & MINT

1 Teaspoon Butter
8 Cups Zucchini, cubed
4 Garlic Cloves, minced
¼ Cup Fresh Mint, chopped

¾ Teaspoon Pepper, divided
2 (9 Ounce) Packages Fresh Fettuccine
1 ½ Tablespoons Olive Oil
¼ Cup Parmesan Cheese

Melt butter in a saucepan over medium heat. Add zucchini and garlic. Cook until tender, about 4 minutes. Stir in the next 2 ingredients; simmer for 5 minutes, Cook Pasta according to package directions, drain. Combine with the remaining ingredients; add the zucchini mixture and toss. Serve.
