ANGEL HAIR PASTA WITH VEGETABLES

8 Ounces Angel Hair Pasta,
uncooked
1 Cup Each Snow Peas, Fresh
Mushrooms, & Carrots, sliced
1 Cup Red, Yellow or Green
Pepper, chopped
1/3 Cup Fresh Basil, chopped
2 Cloves Garlic, minced

2 Tablespoons Olive Oil
2 Teaspoons Cornstarch
1 Cup Chicken Broth
3 Medium Tomatoes, peeled and
chopped
1/4 Cup Parmesan Cheese,
grated

Cook pasta per package directions. In a non-stick skillet, sauté the vegetables in the oil. Combine the cornstarch with the broth and stir until smooth. Add to the vegetable mixture. Bring to a boil and cook for 3-5 minutes. Remove from heat and add tomatoes. Drain the pasta. Mix with the vegetables. Sprinkle with the cheese. Serve.
