WHOLE WHEAT SPAGHETTI WITH ARUGULA

2 Tablespoons Olive Oil, divided
1/4 Teaspoon Crushed Red Pepper
2 Cloves Garlic, crushed
1 Cup Tomato, chopped
1 Pound Arugula, trimmed and torn

4 Cups Whole Wheat Spaghetti, cooked
1 1/2 Tablespoons Red Wine Vinegar
1/2 Teaspoon Pepper
1/2 Cup Parmesan Cheese, grated

Heat 1 tablespoon oil in a pan over medium heat. Add next 2 ingredients. Sauté 20 seconds. Add tomato and arugula, sauté 2 minutes. Spoon into a large bowl. Add 1 tablespoon oil and next 3 ingredients. Toss well. Sprinkle with cheese. Serve.
