TORTILLA PIE

1/2 Pound Ground Beef, lean
1/4 Cup Onion, chopped
1 Garlic Clove, minced
1 Can (14.5 OZ) Italian or Mexican
Tomatoes, diced
1/2 Teaspoon Chili Powder
1/4 Teaspoon Ground Cumin
3/4 Cup Part Skim Ricotta Cheese

1/4 Cup Part Skim Mozzarella
Cheese, shredded
3 Tablespoons Fresh Cilantro,
minced & chopped
4 Flour Tortillas
1/2 Cup Reduced Fat Cheddar
Cheese, shredded

In a non-stick pan cook the ground beef and the next 2 ingredients. Drain. Stir in tomatoes and next 2 ingredients. Bring to a boil and then remove from heat. In a bowl combine the ricotta and mozzarella cheese and 2 tablespoons cilantro. Place 1 tortilla in a 9" round cake pan coated with cooking spray. Layer with 1/2 the meat sauce then 1 tortilla. Add all the ricotta mixture on top another tortilla and the remaining meat sauce. Top with the last tortilla. Sprinkle with the cheese and the remaining cilantro. Cover and bake at 400° for 15 minutes.
