CAJUN HAM AND POTATO BAKE

1 Tablespoon Red Wine Vinegar
1 Tablespoon Dijon Mustard
2 Teaspoons Chili Powder
1/4 Teaspoon Ground Cumin

1/4 Teaspoon Cayenne Pepper
2 Small Potatoes, peeled and sliced
1 Onion, sliced
3/4 Cup Turkey Ham

Preheat oven to 350°. Spray a 9" square baking pan with cooking spray. In a medium bowl combine the first 4 ingredients. Add the potatoes, onion and ham and toss tocoat. Transfer to the pan. Bake, covered for 35 minutes. Uncover and bake for 10 minuteslonger. Serve.
