PORK CHOPS MOLE

Cooking Spray
4 (4 OZ) Boned Pork Chops
1/4 Cup Water
1 Cup Onion, chopped
1/2 Cup Yellow Pepper chopped
1/2 Cup Red Pepper, chopped
1 Tablespoon Jalapeno Pepper, seeded

1 (14.5 OZ) Can Diced Tomatoes
with Garlic and Onion
1/2 Ounce Semi Sweet Chocolate, grated
1 Teaspoon Chili Powder
1 Teaspoon Dried Oregano
1/4 Teaspoon Cumin Seeds
1/2 Cup Cilantro, minced

Heat a large skillet coated with cooking spray. Cook chops 4 minutes on each side. Remove from pan. Add water to pan and scrape sides to remove the brown bits. Pour over the chops. Cover and set aside. Reheat pan coated with cooking spray. Add next 4 ingredients and cook for 4 minutes. Add in the remaining ingredients and cook for 1 minute. Add the pork chops and bring to a boil. Cook for 5 minutes and serve.
