HONEY CUMIN ROASTED PORK |
1 (3 Pound) Boned Pork Roast

1 Tablespoon Ground Cumin
|
Preheat oven to 375°. Trim fat from meat. Score a diamond pattern on top. Combine the next 3 ingredients together. Take 2 tablespoons of this mixture and combine with the onions. Place roast in a broiler pan and place the onions around it. Drizzle the remaining honey mixture over the roast. Bake for 1 hour and 15 minutes, or until thermometerreads 155° (medium rare). Remove meat from pan. Add 1/2 cup of the chicken broth to the drippings. Combine 1/2 cup of this mixture with the other ½ cup chicken broth in a pan. Bring to a boil and reduce heat. Simmer for 5 minutes. Cut pork diagonally intoslices and serve with the onions and sauce. |
