PEPPER CRUSTED BEEF TENDERLOIN

1 (4 Pound) Beef Tenderloin
1 1/2 Teaspoons Olive Oil
3 Tablespoons Dry Bread Crumbs
3 Tablespoons Parsley, minced
1 1/2 Teaspoons Black Pepper
Cooking Spray

1 Cup Fat Free Sour Cream
2 Tablespoons Prepared Horseradish
1 Teaspoon Lemon Rind, grated
1/2 Teaspoon Worcestershire Sauce
1/4 Teaspoon Hot Pepper Sauce

Preheat oven to 400°. Trim fat from meat. Rub the meat with the oil. Combined the next3 ingredients together. Rub the meat with this mixture. Coat with the cooking spray. Place in the oven for 30 minutes. Increase temp. to 425°. Bake another 10 minutes or until thermometer reaches 140° (rare) to 155° (medium) degrees. Mix the remaining ingredients together. Serve with the tenderloin.
