PAN SEARED COD WITH VEGETABLES |
2 1/2 Teaspoons Olive Oil,

1/4 Teaspoon Black Pepper

Heat 1/2 teaspoon oil in a non-stick pan, on low heat. Add the prosciutto and sauté 5 minutes. Set aside. Heat 1 teaspoon oil in a pan on medium heat. Add the mushrooms and leeks and sauté 8 minutes. Stir in tomato and pepper. Gradually add the spinach and stir until it is wilted about 3 minutes. Stir in the prosciutto and basil. Remove from pan and cover to keep warm. Heat 1 teaspoon oil in a pan. Coat the fish fillets with theflour, and add to the pan. Sauté 3 minutes on each side. Cover and cook until it is cooked through about 2 minutes. Serve with the vegetables. |
