SPICY SHRIMP FETTUCCINE

8 Ounces Fettuccine, uncooked
1 Onion, chopped
1 Garlic Clove, minced
1 Tablespoon Olive Oil
4 Tomatoes, chopped
1 Cup Chicken Broth
2 Cups Fresh Spinach, chopped

3/4 Pound Cooked Medium Shrimp,
peeled & deveined
1 Tablespoon Parsley
1 Tablespoon Balsamic Vinegar
1 Tablespoon Margarine
1/4 Teaspoon Pepper
1/8 Teaspoon Cayenne Pepper
2 Ounces Feta Cheese, crumbled

Cook fettuccine according to package directions. In a large non-stick skillet, sauté the onion and garlic in the oil. Add the next 2 ingredients, bring to a boil. Reduce heat and simmer for 3 minutes. Add the next 6 ingredients. Simmer uncovered for 2 minutes. Drain fettuccine, top with shrimp mixture and top that with the feta cheese. Serve
