SHRIMP WITH PINEAPPLE SALSA |

1/2 Large Pineapple, peeled
|
Spray Grill with cooking spray. Thread shrimp on 6 skewers. Whisk 2 tablespoons oil with the lime juice in a small bowl. Brush over shrimp. Let Marinate for 15 minutes. Sprinkle the pineapple with pepper. Grill on the barbecue for 4 minutes per side. Transfer to cutting board and when cool enough chop into pieces. Add to a bowl with the remaining ingredients. Grill shrimp until done about 5 minutes. Serve with the salsa. |
