ROASTED FISH WITH OLIVE OIL & HERBS

4 Each Fish Fillet, any white fish
5 Teaspoons Olive Oil
1 Tablespoon Fresh Parsley, chopped
1 1/4 Teaspoons Thyme, crushed

1 Garlic Clove, minced
1/2 Teaspoon Lemon Zest
1/4 Teaspoon Pepper
2 Teaspoons Lemon Juice

Heat oven to 450°. Arrange fish in a single layer on a jelly roll pan, sprayed with cooking spray. In a cup combine the next 6 ingredients. Spread 1 tablespoon over each fillet. Cover and let stand for 10 minutes. Roast fish 8-10 minutes until cooked through. Stir lemon juice into remaining oil mixture. Spoon over fish. Serve.
