ORANGE GINGER SHRIMP

1/2 Cup Fresh Orange Juice
2 Tablespoons Green Onion, minced
1 Tablespoon Fresh Ginger, minced
1 Tablespoon Fresh Cilantro, minced
2 Tablespoon Rice Vinegar
2 Tablespoons Low Sodium Soy Sauce
1 Tablespoon Olive Oil

2 Teaspoons Orange Rind, grated
1 Hot Red Chile, minced
1 Pound Large Shrimp, peeled and de-veined
2 Oranges, peeled & cut in half & quartered
Cooking Spray

Combine the first 9 ingredients in a bowl. Add shrimp and toss to coat. Refrigerator for 15 minutes. Remove shrimp from dish, reserve marinade. Thread shrimp and orange quarters alternately on skewers. Heat grill, coat with cooking spray. Brush with reserved marinade. Cook 4 minutes on each side or until done. Baste often.
