SUNSHINE HALIBUT

1/3 Cup Onion, chopped
1 Clove Garlic, minced
2 Tablespoons Parsley, minced
1/2 Teaspoon Orange Peel, grated

4 (4 OZ) Halibut Steaks
1/4 Cup Orange Juice
1 Tablespoon Lemon Juice
1/4 Teaspoon Lemon Pepper
Seasoning

In a non-stick skillet coated with cooking spray, sauté onion and garlic until tender. Remove from heat. Stir in parsley and orange peel. Place halibut in an 8" square pan coated with cooking spray. Top with onion mixture. Combine the orange juice and lemon juice and pour over the top of the fish. Sprinkle with the lemon seasoning. Cove and bake at 400° for 15-20 minutes or until fish flakes easily. Serve.
