SHRIMP WITH ORZO |
28 Ounces Tomatoes, canned

1/4 Teaspoon Black Pepper

Preheat oven to 450°. Drain tomatoes in a sieve with a bowl underneath. Reserve 1/2 cup liquid. Cook the orzo in a pan with boiling water per package instructions. In a non-stick pan over medium heat, Add onion, garlic and wine and cook 1 minute. Add tomatoes and liquid, 1 1/2 tablespoons parsley, and next 4 ingredients. Cook 5 minutes. Add shrimp and cook 2 minutes. Stir in pasta. Spoon mixture into an 11 x 7 pan coated with cooking spray. Top with the cheese and the remaining parsley. Bake for 10 minutes. |
