GREEK STYLE SCAMPI

1 Teaspoon Olive Oil
5 Garlic Cloves, minced
1/2 Cup Fresh Parsley, chopped
and divided
2 (28 OZ) Cans Whole Tomatoes,
drained and chopped

1 1/4 Pounds Large Shrimp,
peeled and de-veined
1 Cup Feta Cheese, crumbled
2 Tablespoons Lemon Juice
1/4 Teaspoon Pepper
4 Cups Spaghetti Noodles, cooked

Preheat oven to 400°. Heat oil in a dutch oven over medium heat. Add garlic and sauté 30 seconds. Add 1/4 cup parsley and tomatoes. Reduce heat and simmer 10 minutes. Add shrimp and cook 5 minutes. Pour mixture into a 13 x 9 pan. Sprinkle with cheese. Bake for 10 Minutes. Sprinkle with 1/4 Cup parsley, lemon juice and pepper. Serve over the pasta. Spoon over the olives. Drizzle with the remaining broth mixture. Serve.
