GREEK STYLE SCAMPI |
1 Teaspoon Olive Oil

1 1/4 Pounds Large Shrimp,

Preheat oven to 400°. Heat oil in a dutch oven over medium heat. Add garlic and sauté 30 seconds. Add 1/4 cup parsley and tomatoes. Reduce heat and simmer 10 minutes. Add shrimp and cook 5 minutes. Pour mixture into a 13 x 9 pan. Sprinkle with cheese. Bake for 10 Minutes. Sprinkle with 1/4 Cup parsley, lemon juice and pepper. Serve over the pasta. Spoon over the olives. Drizzle with the remaining broth mixture. Serve. |
