SHRIMP WITH FETA AND TOMATOES

4 Scallions, sliced
2 Cloves Garlic, minced
3 Tomatoes, chopped
1/4 Cup White Wine
1 Tablespoon Lemon Juice

1/4 Teaspoon Pepper
1 Pound Shrimp, peeled and de-veined
1/3 Cup Crumbled Feta Cheese
1/4 Cup Chopped Parsley
4 Cups Brown Rice, cooked

In a large skillet mix the first 7 ingredients and simmer for 30 minutes. Remove from heat, add the cheese and parsley. Serve over the rice.
