GREEK FETA SANDWICH

2 Tablespoons Feta Cheese, crumbled
2 Tablespoons Lemon Juice
1 Tablespoon Olive Oil
1/2 Teaspoon Sugar
1/2 Teaspoon Oregano
1 Garlic Clove,
minced
1/4 Teaspoon Black Pepper

8 Slices Tomato
8 Slices Sour Dough Bread
1 Cucumber, peeled and sliced
3 Cups Arugula
1/2 Cup Red Onion, sliced
2 Tablespoons Kalamata Olives, chopped

Combine the first 6 ingredients in a bowl. Place 2 tomato slices on 4 slices of bread.Sprinkle with the pepper. Arrange cucumber on top. Add the remaining 3 ingredients to the vinaigrette mixture that was set aside. Toss to coat and place on the bread dividing equally among the 4 slices. Top with the remaining bread slices. Serve.
