CHICKEN SANDWICHES

1 ¼ Pounds Skinless Boneless Chicken
Breasts, cut in strips
2 Tomatoes, seeded and chopped
½ Cup Seeded Cucumber, chopped
½ Cup Onion, sliced
2 Tablespoons Cider Vinegar

1 Tablespoon Olive Oil
1 Teaspoon Dried Oregano
½ Teaspoon Dried Mint
3 Whole Pita Breads, halved
& warmed
6 Lettuce Leaves

Heat a skillet with non-stick cooking spray. Add the chicken and cook until done. In a bowl combine the chicken and the next 7 ingredients. Divide evenly among the pita halves. Serve.
