Ingredients:
4 Each boneless skinless chicken breast
3 Each Zucchini, diced
15 ounces canned tomatoes
1 Tablespoon Garlic, Minced
1 Each Red Onion, diced
3 Cups Rigatoni
1 Cup Low Fat Feta Cheese
1 Teaspoon Lemon Zest
3 Teaspoons Oregano
3 Teaspoons Italian Seasoning
1/2 Teaspoon Pepper
1 Cup Parmesan cheese, grated
1 Cup Fat free Mozzarella cheese, grated
Cook the noodles 5 minutes only. Place in the Pan. Mix all ther other ingredients except the Parmeasan cheese and Mozzarella cheese. Place over thwe Rigatoni. Sprinkle with the 2 cheeses. Bake 350 covered for 45 Minutes Freeze the other 2. Take out 3 days prior to cooking to thaw. Last 3 months in the freezer.
