Roasted Mediterranean Halibut

Ingredients:
Cooking Spray
6 (4 OZ each) Halibut Steaks
1 1/2 Teaspoons Garlic, minced
1/4 Cup Fresh basil, chopped
1/4 Cup Olive Oil
1/4 Cup kalamata olives, pitted and chopped
1 Tablespoon capers, drained
1 Tablespoon Caper Juice
1 Tablespoon sun-dried tomato half, drained and chopped
Zest of 1 lemon
Mix the garlic and the next 6 ingredients in a bowl. Spray the Baking Pans. Divide the Mixture Evenly between the pans. Sprinkle each steak with the lemon zest. Preheat oven to 450. Bake uncovered for 7-8 minutes or until halibut is flaky . Freeze the other 2 and take out 3 days prior to cooking to thaw.
