SPICED WAFFLES WITH BROILED PEARS

WAFFLE:
4 Egg Whites
1/2 Cup Liquid Eggs
1 Cup Plain Fat Free Yogurt
2/3 Cup Reduced Calorie Syrup
2 Tablespoons Brown Sugar
2 Teaspoons Vanilla Extract
2 Cups Flour
1/4 Cup Whole Wheat Flour
1 1/4 Teaspoon Baking Soda
2 Teaspoons Ground Cinnamon

1/4 Teaspoons Ground Cloves
1/2 Teaspoon Ground Ginger
1/2 Teaspoon Ground Nutmeg
PEAR TOPPING:
4 Small Pears, halved, cored and sliced
2 Teaspoons Lemon Juice
1 Tablespoon Pecans, chopped
1 Tablespoon Brown Sugar
1/2 Teaspoon Ground Cinnamon
Strawberries and Orange Twists (optional)

In a large bowl, mix the liquid eggs with the yogurt; pancake syrup, sugar and vanilla. In another bowl stir together the flour, baking soda, cinnamon, cloves, ginger and nutmeg. Stir the egg mixture into the flour mixture until smooth. With an electric mixer, beat the egg whites until stiff peak form. Stir 1/4 of the whites into the batter to lighten. Gently fold the rest of the whites until no streaks remain. Preheat the broiler and waffle iron.Spread 1/4 of the batter into the waffle iron. Cook until done. Place the pear slices on a foiled lined baking pan and brush with the lemon juice. Sprinkle with the pecans, sugar, and cinnamon. Broil until cooked through 6 to 8 minutes. Place 2 waffles on each plate and top with pear mixture. Garnish with strawberries and orange twists if desired.
