CRANBERRY MUFFINS

2 Cups Flour
2/3 Cups Sugar
2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1 Cup Fresh Cranberries, chopped
2/3 Cup 1% or Fat Free Milk

1/4 Cup Butter, melted
1 Teaspoon Orange Rind, grated
1/2 Teaspoon Vanilla Extract
1 Large Egg Beaten
Cooking Spray

Preheat Oven to 400°. Spoon flour into measuring cups and level. Combine with the next 3 ingredients and stir well. Stir in cranberries. Make a well in the center. Combine the next 5 ingredients in a bowl and stir well. Add to the flour mixture into the well gradually and stir until combined. Spoon into 12 muffin tins coated with cooking spray. Bake for 18 minutes or until they spring back when touched in the center. Remove from pan. Cool.
