BANANA NUT MUFFINS

2 Cups Flour
1/4 Cup Sugar
1 Tablespoon Baking powder
1 Cup Milk, 2%, low fat

1 Each Egg white
1/3 Cup Applesauce
3/4 Cup Banana, mashed
1/2 Cup Walnuts, chopped

Preheat oven to 400°. Line muffin tins with muffin liners or spray with non-stick cooking spray. Sift the flour, sugar, and baking powder into a medium bowl. In another bowl, mix milk, egg, applesauce, and nuts in a bowl until blended. Add to the flour mixture and blend until smooth. Spoon batter into the muffins tins. Bake for about 15 minutes until golden brown or toothpick comes out clean when inserted in the center.
