TORTILLA STRATA

1 Cup Salsa
1 Cup Canned Black Beans, rinsed and drained
10 Corn Tortillas, cut in 1" strips
Cooking Spray
1 Cup Reduced Fat Mexican Blend or Monterey Jack Cheese, shredded

1 Cup Fat Free Sour Cream
1 Cup Fat Free Milk
2 Eggs2 Egg Whites
1/4 Cup Green Onions, sliced

Combine salsa and beans in a bowl. Place 1/3 of the tortilla strips in an 11 x 7 baking dish, coated with cooking spray. Top with 1/3 the cheese. Top with 1 cup salsa mixture. Repeat the steps. Combine sour cream and next 3 ingredients. Stir with a whisk. Stir in the onions. Pour over the tortilla mixture. Sprinkle with 1/3 cup of the cheese. Cover and chill overnight. Preheat oven to 350°. Bake for 20 minutes. Uncover and bake for 15 more minutes. Serve.
