2 Teaspoons Butter

Combined the first 6 ingredients together in a bowl. Set aside. Melt butter in a pan over medium heat. Add onion and potatoes and cook for 9 minutes. Pour egg mixture over the onion mixture. Arrange peppers on top. Cook 7 minutes or until set. Sprinkle with the cheese. Wrap panhandle with foil. Preheat broiler. Broil for 5 minutes or until cheese is slightly brown. Cut into 4 wedges. Serve. |
