FLORENTINE FRITTATA

2 Tablespoons Water
1/2 Teaspoon Basil, dried
1/2 Teaspoon Pepper
1/4 Teaspoon Oregano, dried
1 (16 OZ) Carton Egg Substitute
1 (10 oz) Package Frozen Spinach, drained chopped, dried

2 Teaspoons Butter
2 Cups Red Onion, sliced
2 Cups Frozen Shredded Hash Browns
1 (7 OZ) Bottled Roasted Red Peppers, drained, sliced
3/4 Cup Feta Cheese, crumbled

Combined the first 6 ingredients together in a bowl. Set aside. Melt butter in a pan over medium heat. Add onion and potatoes and cook for 9 minutes. Pour egg mixture over the onion mixture. Arrange peppers on top. Cook 7 minutes or until set. Sprinkle with the cheese. Wrap panhandle with foil. Preheat broiler. Broil for 5 minutes or until cheese is slightly brown. Cut into 4 wedges. Serve.
