CRANBERRY ORANGE MUFFINS

1 1/4 Cups plus 1 Teaspoon Flour
1/4 Cup Cornmeal
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Cup Cranberries, rinsed

1/4 Cup plus 2 Tablespoons Sugar
3 Egg Whites
3/4 Cup Plain Fat Free Yogurt
2 Tablespoons Orange Concentrate, thawed
2 Teaspoons Orange Peel, grated

Preheat Oven to 400°. Line muffin tins with paper muffin cups. In a medium bowl, stir together the dry ingredients, except the sugar. In a small bowl combine, cranberries and2 tablespoons sugar. In another bowl beat the egg whites, yogurt, remaining sugar, orange concentrate and orange peel. Add egg mixture to flour mixture and stir until blended.Stir in the cranberry mixture and blend. Spoon batter into muffin cups. Bake for15 to 18 minutes.
